A. Yes Surface gets hot . Induction cook-tops generate a strong electrical field which interacts with the iron-content in the base of the pan. This results in heat being developed in the pan-base.
Infrared cook-tops use a powerful lamp in the infrared part of the light spectrum which is focussed onto the glass or ceramic surface of the cook-top. This heat is then transferred to the pan by conduction.
Q . Are Infrared Cookers or Induction Cookers better than Hot plates ?
A. Yes Infrared cookers Heat up much Faster than hot plates and hence will save you electricity as well since hot plates take a longer time to heat and are not suitable for cooking curry’s

Q . Are Induction Cookers or Infrared Cookers More Cost Effective than Using Gas
A. You only need about half the amount of kWh’s for induction or infrared to cook the same food than gas. However, gas is usually a third or a quarter of the price per kWh, so gas is nearly always cheaper. However with the shortage of gas it is necessary to have either an Induction cocker or an Infrared Cooker as a Backup option
