A. Yes Surface gets hot . Induction cook-tops generate a strong electrical field which interacts with the iron-content in the base of the pan. This results in heat being developed in the pan-base. Infrared cook-tops use a powerful lamp in the infrared part of the light spectrum which is focussed onto the glass or ceramic surface of the cook-top. This heat is then transferred to the pan by conduction.

Q . Are Infrared Cookers or Induction Cookers better than Hot plates ?
